Roasted beets with figs and toasted pistachios

Founded in 2009 by New York–based artist Linda Goode Bryant, Project EATS is a growing network of community-based food systems using art, urban agriculture, and statewide partnerships to expand access to fresh, nourishing food. Project EATS works directly with communities to create small plots and high-yield farms. They also host community meals, courses focused on food-based wellbeing, and after-school workshops on urban agriculture in areas where fresh food and nutrition education are needed most. At the heart of their mission is a simple belief: “Communities deserve to grow their own food right where they live, and everyone should have the ability to live healthily and thrive.”

At Manuela, we’re proud to support Project EATS in multiple ways—from our on-site composter, The Rocket, to the seasonal beet dish that has become a quiet signature. Whether you love them or hate them, there is always a beet on our menu. It’s a vegetable-led staple that shifts with the seasons and a reminder of how simple ingredients can anchor bigger commitments.

This season, we’re deepening our commitment. In partnership with Project EATS, we will donate $1 from every beet dish ordered to support their work across New York City. Guests will also have the opportunity to add an additional donation during or after their meal.

Project EATS’ impact reaches far beyond the plate—from growing and distributing fresh produce in neighborhoods with limited access, to creating pathways for employment, training, and community leadership in farming and culinary work. We’re honored to play a small role in that effort, and grateful to everyone who joins us in supporting it.
